Hello everyone, welcome back to Gluten Free Hannah!
One thing I’ve realised since becoming gluten free is that home baked gluten free cakes are a lot nicer than shop bought cakes.
Here is my super easy recipe to make delicious fudge muffins. I really mean it when I say it’s super easy, there are only six ingredients!

INGREDIENTS
- 130g fudge, cut in to small chunks
- 1 tbsp milk
- 85g softened butter
- 40g demerara sugar
- 1 large egg
- 100g gluten free self-raising flour (I used Asda’s Gluten Free Self-Raising Flour)
METHOD
Preheat oven to 190°C and place 6 paper cases into a muffin tin
Put half of the fudge and all of the milk into heatproof bowl and place over a saucepan of simmering water. Stir occasionally until all the fudge has melted. Remove from the heat and stir until smooth. Leave for 10 minutes to cool.
Mix together the sugar and butter until light and fluffy. Beat the egg and gradually add it to the mix. Sift in the flour and then, using a spoon, fold in the fudge.
Fill up the muffin cases and scatter the remaining chunks of fudge over the top
Bake in the oven for 15-20 minutes, or until the muffins have risen and are golden brown
Transfer to a wire rack and leave to cool
And that is it! You have delicious fudge muffins!
