Hello everyone, and welcome back to Gluten Free Hannah.
As we’re well into December now, I thought it’s time to start doing some festive baking. So, here’s my recipe to make gingerbread biscuits.
250g gluten free flour (I used Sainsbury’s FreeFrom plain flour)
1 tsp baking powder
½ tsp bicarbonate of soda
1 tsp cinnamon
2 tsp ground ginger
1 pinch salt
60ml golden syrup
100g brown sugar
1 Cream the butter and brown sugar together in a bowl
2 Add the golden syrup and egg, and mix until combined
3 In a separate bowl, sift the rest of the dry ingredients together, and then add them to the first bowl
4 Mix together and then leave the mixture in the fridge for 1 hour
5 Lightly knead the dough on a floured surface (the mixture is very sticky so I found I needed a lot of flour on my surface!)
6 Roll out the dough until it is around 5mm thick, and the cut out your biscuit shapes (as it’s December, I used lots of Christmas shapes!)
7 Bake at 170°C for 15 minutes, or until well browned
8 Leave to cool on the tray for 5 minutes then transfer to a wire rack
9 When completely cool, you can add icing and decorate your biscuits! (TOP TIP: If you don’t have a reindeer cutter, you can turn a gingerbread man shape upside down to get a reindeer’s head!)
These turned out so well, they are delicious and crispy but also with a really warm, wintery cinnamon taste. Also, this recipe makes a lot of biscuits, so perfect for snacking on over Christmas time!
