Gluten Free Mince Pies

I hope everyone has been embracing the festiveness and are ready for Christmas! (only 3 more sleeps!!)

Anyway, Christmas wouldn’t be Christmas in my house without some homemade mince pies. The only problem I had was finding some suitable gluten free pastry to use. That’s when I came across this Genius gluten free shortcrust pastry.

Mince pies are probably one of the easiest things to make, especially when you can buy ready-made pastry. This one from Genius is frozen so is perfect for keeping in your freezer for whenever you need it.

Once defrosted, roll the pastry out on to a floured surface and start cutting the shapes. You’ll need a larger circle for the base of the mince pie and then a smaller circle for the top of the mince pie. I have also used a star cutter to imprint a star on to the top of mine. Since my mum has made a batch of non-gluten free ones, it makes it easy to tell which ones are gluten free too. You could also use a star shape for the top of the pies, or have a circle with a cut-out star.

Grease a cake tin and fill each mould with the larger circles, gently pressing in to the edges of the tin. Take some mincemeat and fill the pies. I fill mine about half full, but it is completely up to your preference. Then wet the edges of the pastry with some water and stick the lid on top. Sprinkle some sugar on the top and bake in the oven, at 180°C for 12-15 minutes or until golden brown.

I was so impressed with the Genius pastry, which I found in Sainsbury’s, and thoroughly enjoyed the taste of my gluten free mince pies.
