Hello everyone, and welcome back to Gluten Free Hannah!
It’s been a year of ‘Gluten Free Firsts’ for me, and as we near the middle of February, it’s my first gluten free pancake day. Growing up for me, pancake day was always about crepe style pancakes and so this year will be no different… except they will be gluten free!
Crepes have to be the easiest thing to make, and here’s how to do it.
- 125g gluten free plain flour (I used the one from Sainsbury’s)
- 1 egg
- 250ml milk
- Butter for frying
This recipe makes 3-4 crepes, but it may make more depending on how big, or thick you like your pancakes!
Sift the flour into a bowl. Crack the egg into a well in the middle of the flour and add about ¼ of the milk. Using a whisk, mix it together and gradually add more milk. Once the mixture is smooth and there are no lumps of flour, leave it to rest for 10 minutes or so.
Grease your frying pan using some butter, and once the pan is covered, pour in a small amount of the mixture. Swirl the pan to make sure the mixture is spread evenly and fairly thinly. Once golden brown, flip the pancake over and cook the other side.
Repeat this until you have used all of the mixture and serve with toppings of your choice! I had mine with golden syrup and sliced banana.
